Chef Maxime Pale and the Brasserie team launch the new Autumn menu.
The weather is still sunny and bright but there is a definite nip in the air so the dishes will be perfect comfort food to prepare for the Winter season.
The new menu sees the return of one of the Brasserie’s signature dishes: “Papet Vaudois”. For meat-eaters, there’s a lot to please your palette, wood pigeon, venison and veal feature in both starters and main courses. There’s a delicious vegetarian option in the ceps mushroom risotto with Piemont hazelnuts which will keep the wolf from the door.
For those with a sweet tooth, the dessert menu contains seasonal fruits such as ice meringue green apples and vanilla and figs not to mention “La pêche Haeberlin”!
